Raw Coconut Energy Balls


These raw, vegan tropical snowballs make an awesome little snack. They are tasty enough to be worthy of a "treat", yet also pack enough energy to make them an ideal pre-workout snack. And don't worry about the fat! Coconut oil is actually good for us and has some pretty cool, unique health benefits

Warning: These will not last long in your kitchen at all!

Prep time: 15-20 minutes 
Cook Time: 0 minutes
Servings: 12 balls

You will need:

  • 1 3/4 cups unsweetened shredded coconut
  • 2 teaspoons melted virgin coconut oil
  • 3 tablespoons maple syrup, brown rice syrup or agave
  • 2 tablespoons organic coconut milk
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon sea salt

Steps to make:

  1. Put 1 cup of the coconut into your blender/processor with the coconut oil
  2. Pulse your blender on high speed. You'll have to keep scraping down the sides. After about 5 minutes it'll look something like this:

  3. Once you have this paste like consistency, add the maple syrup, coconut milk, vanilla, cinammon and salt. Blend until all the ingredients are mixed well
  4. Add the rest of the coconut and pulse until mixed like this:

  5. Use your hands to shape the mixture into ping pong sized balls and sprinkle with some extra coconut
  6. Pop them in the fridge for an hour before eating!
