Bacon & Veggie Rice Bowl

As the days grow shorter and the morning air becomes a little more crisp, you'll want something with more substance than your typical summer fruit bowls. This is where the Bacon & Veggie Rice Bowl comes into its own. The varied vegetables and spices are full of health-promoting compounds and the brown rice will provide you with sustained energy for the following hours. And, of course, it has everyone's favourite...bacon. You can whip this together in less than 20 minutes and feel free to boost the energy content and deliciousness by adding half a ripe avocado. 

Prep time: 10 minutes
Cook Time: 10 minutes
Servings: 1 filling bowl

You will need:

  • 2-3 rashers of good quality bacon (cut into 1" pieces)
  • 1 leek (8" length chopped into 1/4" pieces)
  • 1 tomato (sliced)
  • 2 cloves of garlic (diced)
  • 1/4 cup chopped red cabbage
  • 2 mushrooms (sliced)
  • 1 tsp apple cider vinegar
  • Salt and pepper to taste
  • 1/2 tsp of turmeric
  • 1 tsp coconut oil
  • 1 tbsp water
  • 1 cup of brown rice
  • Half an avocado (optional)

Steps to make:

  1. Add the bacon and tomatoes to a frying pan over a low-medium heat for 90 seconds
  2. Add the rest of the vegetables, stir frequently and cook until soft (~5-7 minutes). Add a tbsp of water half way through to keep the temperature down - this steams as well as fries and is a healthier way to cook.
  3. Turn off the heat and stir in the turmeric, salt & pepper, apple cider vinegar and coconut oil.
  4. Add the rice to a bowl and top it with the bacon and vegetables.
  5. Enjoy!
